Hakkaisan Clear Sparkling "Awa" White Koji 360 ml

Hailing from Niigata Prefecture, this creation reflects a perfect balance between centuries-old tradition and modern ingenuity. The producer, celebrated for precision and quality, has crafted a sparkling expression that showcases natural elegance and clarity. Utilizing a secondary in-bottle fermentation, the liquid achieves delicate carbonation that lifts its refined character, while the inclusion of white koji and carefully cultivated yeast adds depth and harmony to the overall profile. This clear and effervescent offering is a testament to the producer’s commitment to refined, celebratory beverages that delight both the eye and the palate.

On the nose, gentle effervescence presents a light, inviting fragrance that hints at subtle fruit and grain nuances. The palate is bright and refreshing, with a gentle tartness balanced by soft, harmonious flavors brought forward by the white koji and yeast. Fine sparkling bubbles enhance the experience, carrying the liquid smoothly across the mouth to a crisp, elegant finish. Versatile in pairing, it complements dishes from delicate vegetable preparations like eggplant and mozzarella mille-feuille or asparagus in gorgonzola sauce to heartier options such as grilled chicken wings or beef lasagna, making it a sophisticated choice for any occasion.
