What is kushi unagi?
Kushi unagi is raw freshwater eel, butterflied and threaded onto skewers (kushi), sold uncooked so you can grill it yourself at home. This AAA-grade eel comes from Aichi and Shizuoka, two of Japan's most established eel-producing regions, prized for well-fed, evenly-fatted fish. At about 350g, one package is enough for two servings.
Grilling it yourself means you control the finish - classic kabayaki (basted repeatedly in a sweet soy tare until glazed and caramelized) or shirayaki (grilled plain, without sauce, to taste the eel itself, usually finished with just salt or a little grated wasabi). Unagi sauce is sold separately if you'd like to make kabayaki-style tare at home.

How to Enjoy
Grill over charcoal or under a broiler, skin-side down first, until the skin crisps and the flesh turns opaque. For kabayaki, baste with unagi sauce every couple of minutes near the end of grilling so the tare glazes rather than burns. For shirayaki, grill plain and season simply with a little salt, or dip lightly in soy sauce with grated wasabi. Either way, serve hot, ideally straight from the grill.
Pairs well with - warm short-grain rice, sansho pepper, a light dashi-based soup, pickled vegetables, and a dry sake.
