Daishichi Kimoto Honjozo 1800 ml

Daishichi Kimoto Honjozo is a classic expression from Daishichi, a Fukushima producer founded in 1752 and devoted to the traditional Kimoto style throughout its long history. The producer carefully refines selected rice, prepares its own koji by hand, and follows the Kimoto approach, a longstanding hallmark of the house. First introduced as Daishichi’s standalone Kimoto expression in 1982, the product reflects the producer’s long-standing pursuit of depth, balance, and food compatibility while presenting a clean, refreshing character. Its combination of savory richness and a crisp, dry finish makes it a versatile choice for everyday enjoyment, whether served chilled or warm.

On the palate, Daishichi Kimoto Honjozo brings together the characteristic savory depth associated with the Kimoto style and a clean, refreshing profile with a crisp, dry finish. The overall impression is balanced and clear, making it especially well suited to the table. Pair with grilled fish, simmered dishes, fried chicken, yakitori, or gyoza for an easy match with a wide range of everyday Japanese and izakaya-style dishes.
