We pickle these plums using a method designed to maximize the flavor of fully ripened Nanko plums—the ultimate plum variety. The organic acids found in fully ripened Nanko plums, such as citric acid and malic acid, are what give *umeboshi* (pickled plums) their characteristic tartness. If this acidity is too strong, the result is an intensely sour plum—much like traditional *shiroboshi-ume* (plain salted plums)—yet if the acidity is suppressed too much, the flavor suffers. Thanks to Godai-an’s signature long-term pickling process, we maintain a perfectly balanced acidity while fully preserving the delicious flavor of the ripened Nanko plums.
