Yunnan Chives Flower with Gongcai Flavor 70 g

Introduction to Yunnan Ashima Chives Flower with Gongcai Flavor

Yunnan Ashima Chives Flower with Gongcai Flavor is a characteristic pickled vegetable produced by Qujing Qilin Vegetable Group Co., Ltd.

The detailed introduction is as follows:

• Brand Background: Ashima Chives Flower has a history dating back to the Guangxu period of the Qing Dynasty. It won the gold medal at the 1928 Panama-Pacific International Exposition, and the famous writer Wang Zengqi once praised it as a "masterpiece" among Chinese pickles in his articles.

• Ingredients & Formula: The main ingredients are chives flowers, gongcai (a unique Chinese vegetable, often directly transliterated; it has a crisp texture and is commonly used in cold dishes or side dishes), and chili. It is seasoned with sugar, white wine, edible salt, yeast extract, etc. The careful combination of ingredients ensures its unique flavor.

• Production Process: It inherits traditional craftsmanship. From July to August of the lunar calendar each year, tender chives flowers (half with seeds and half in bloom) are selected, rinsed three times with clean water, and air-dried until they are 70% dry. Then, they are mixed in proportion with processed gongcai and chili, moistened with brown sugar and grain wine, and packed into clay pots, pressed layer by layer. The pots are sealed with lotus leaves and yellow mud. In the first three months, the pots are opened and stirred once a month, followed by constant-temperature cellar storage for about half a year to allow full saccharification and fermentation.

• Taste & Flavor: It combines the fresh aroma of chives flowers with the crispness of gongcai, offering a crunchy and delicious taste. The sweetness, saltiness, and spiciness are well-balanced, with a rich sauce aroma, making it an appetizing side dish that goes well with rice.

• Packaging Specifications: The common packaging is 70g small bags, which are convenient for carrying and storage. There are also various combined bag specifications available to meet the needs of different consumers.
