而蛋白亦能提升麵餅口感至爽滑彈牙同時蛋黃被抽走，能降低膽固醇含量，濃湯亦被麵餅吸收，最後在煮麵時味道亦能釋放到開水中，
最後連湯放入碗中即可享用。食用方法: 一碗到一碗半水(約400cc) 煲滾後，把麵放入沸水中大約兩分鐘至散開，無需過冷河，連湯放入碗中即可食用
