As one of the rare breweries committed exclusively to junmai ginjo, the company revived pure-rice sake in the 1960s and remains a pioneer of additive-free brewing. The “Classic” Yamahai Junmai Ginjo embodies their dedication: crafted from Yamada‑Nishiki rice polished to 60%, it’s slowly fermented using the traditional yamahai method—twice the time and skill, cultivating lactic acid and natural umami complexity.
