What sets this ciabatta apart is Japanese shio koji.
Shio koji is a fermented seasoning common in Japanese cooking. Ours is made in-house, slowly matured from rice koji, sea salt and water.
As the koji matures, it breaks the starch and protein in the rice down into sugars and amino acids. So shio koji is not just salty, it carries a rounded, savory sweetness. Kneaded into the dough in place of some of the salt, it softens the saltiness, and each bite has layered savory depth that grows the longer you chew.
The dough also includes extra virgin olive oil. It is built mainly on French flour, with very high hydration, and cold-fermented overnight. The crust is thin and crisp, the inside full of large and small air pockets, soft and moist with a light olive-oil aroma.
It is one of the best breads for sandwiches. Split it, fill with ham, cheese and arugula, press and toast it for an Italian panini. Or warm it and tear it up, dipped in olive oil and balsamic.
