This centuries-old regional practice provides a naturally cool environment for extended maturation, allowing the Junmai Daiginjo to develop gradually under remarkably consistent conditions. The approach reflects Hakkaisan’s connection to the snowy landscape of Uonuma and its commitment to exploring the character that careful maturation can bring.
