We pickle these plums using a method designed to maximize the flavor of fully ripened Nanko plums—the ultimate plum variety. Organic acids such as citric acid and malic acid, naturally present in these plums, are what give *umeboshi* (pickled plums) their characteristic tartness. While high acidity results in an intensely sour taste—typical of *shiroboshi-ume* (plain salted plums)—excessively suppressing the acidity can compromise the flavor. Thanks to Godai-an’s signature long-term pickling process, we strike the perfect balance, maintaining just the right amount of tartness while fully preserving the delicious taste of the ripened Nanko plums.
