Description

Royal Seafood USA presents wild-harvested Canadian black morels (Morchella spp.) — one of the most prized foraged mushrooms in the world. Many of these are true "fire morels": they emerge the spring after a forest fire, when mineral-rich ash and shifted soil pH create the perfect conditions for an explosive wild bloom. Because this cycle can't be fully replicated by farming, every batch is genuinely wild, hand-picked, and impossible to mass-produce.

The dried caps are conical and deeply pitted like a honeycomb, hollow inside, in dark brown to near-black tones. Slow-grown in Canada's cold northern forests, the flesh is denser and meatier than cultivated morels — holding its shape through long braises without falling apart. The aroma is deep and layered: toasty wood-nut, damp forest floor, and a faint natural smokiness from the burn-site terroir.
How to Use

1. Rehydrate

Soak the desired amount in warm water (around 40°C / 104°F) for 20–30 minutes until plump and flexible. Morels are "sponge mushrooms" — they swell back to near-fresh size.

Save the soaking liquid. After settling out the grit, that dark aromatic broth becomes the secret weapon for soups, sauces, and risottos.

2. Gourmet Soups & Broths

Add rehydrated morels to chicken stock with goji, yam, or lean pork for a refined clear broth. The caps release a deep umami that regular mushrooms can't match.

3. Creamy French Sauce (Sauce aux Morilles)

Sauté morels in butter, deglaze with white wine, finish with cream. A classic accompaniment to steak, roast poultry, or fresh pasta.

4. Risotto & Pasta

Stir sliced morels and their reserved broth into risotto or tagliatelle for a restaurant-level earthy depth.

5. Stuffed & Roasted

Pipe herbed cheese, crab, or pork mousse into whole caps; wrap with bacon or roast plain — the hollow structure makes them built for stuffing.

6. Steamed Egg & Stir-Fry

A few pieces over steamed egg custard, or a quick stir-fry with greens, instantly upgrades an everyday dish.
