I've had my eye on branzino for a while but always balked at the fresh seafood counter prices. When I saw this 16 oz frozen pack at a great deal, I finally decided to pull the trigger and stock up—so glad I did! I've always planned to pan-fry it, and that's exactly what I did. I patted the fillets dry, seasoned simply with salt and pepper, and threw them skin-side down in a hot pan with olive oil. The skin crisped up beautifully in about 4 minutes, and the meat flaked apart perfectly after flipping for another 2-3 minutes. The texture is exactly what you want from a good sea bass—incredibly tender, moist, and juicy right through to the center. No dryness, no fishy smell, just delicate, mild sweetness. It tasted like a restaurant-quality dish but cost a fraction of the price.

There were three buns in the bag. I cooked one for my husband today. He first air-fried it for 10 minutes and then transferred it to the stove; adding tomatoes and tofu made it cook faster, which was another way of cooking it.
