This was my first time making turkey legs, and I was surprised to find so many thin bones while deboning. I filled them with glutinous rice and chestnut filling, but I put in too much, so the roll didn't hold together, and it fell apart when I cut it. However, it tasted great, and the glutinous rice was especially popular.
Marinate for 24 hours, then bake until almost cooked through. Add vegetables, brush with sauce, and bake for another 30 minutes (flipping halfway through). The result is perfectly tender and juicy.

Rosemary confit duck leg
As many reviews have mentioned, it was very oily and salty. The photo was taken before roasting, after the duck was heated in a water bath. The duck meat was very tender.
