This was my first time buying frozen grouper. When I opened the package, the fish was already very clean. I just needed to wash it briefly, make a few cuts on its back, add some salt, cooking wine, white pepper, scallions, and ginger, and steam it for 12 minutes. Then I sprinkled hot oil and steamed fish soy sauce on top. It was perfect to eat. The fish was thick, not fatty, and delicious!

Even though it's not wild caught and frozen, it doesn't have the fishy frozen smell that you find with HEB frozen wild fish. Tiger grouper is one of my best buys in terms of frozen fish, as the flesh is soft and plentiful. Served best steamed with ginger, spring onion, soya sauce and sesame oil.
