Brisket was very delicious. Made Korean beef soup( Najoo gomtang). It was pretty good.
40-50% fat on all sides. Brisket is generally about 20% fat so this is a horrible cut. I saw some pictures of much more reasonable amounts of fat. The butcher should know they needed to trim more. Not worth the money for this cut. I could buy similar cuts for half the price at a local store.

This beef shank fits the description of 1.5-2.2 pounds, which is quite small for the price.
After parboiling the beef tendons twice and then cooking them in a pressure cooker, I made a delicious beef tendon curry! Personally, I would have preferred a little more fat.

I boiled the two pieces shown in the product photo over low heat for about 12 hours, changing the water twice. (The attached photo is of one of them.) They are so tender you can tear them apart with your hands. Tonight's dinner is beef tendon curry.
