What I ordered: A whole frozen native chicken, the kind we grew up eating back home. It arrived frozen solid in a bag, and I defrosted it in the fridge before cooking. The flavor: This is the main reason to buy it. Native chicken tastes more like chicken than regular supermarket chicken, with a deeper, richer flavor, and it makes a great sauce. It was perfect for my caldereta because the meat soaked up the tomato sauce. The texture: It's leaner and firmer than regular chicken, with a bit of chew, which is how native chicken should be. It needs a longer, slower simmer to get tender, so don't rush it. The pieces are smaller and bonier too, but the bones add a lot of flavor to the pot. Convenience: Having it delivered frozen is great when there's no Filipino market nearby. Just plan ahead, since a whole bird takes time to thaw in the fridge.

The chicken was delicious, the meat was tender and sweet, the skin was chewy and crispy, very tasty. There were lots of soft-boiled eggs; I stir-fried half of them, and cooked the offal and soft-boiled eggs into a porridge, which was fragrant, delicious, and sweet. Thank you, Wee.
The chicken was very well preserved; it even had ice crystals when it arrived, and it was larger than I expected.
The chicken is frozen but very fresh; you have to prepare it with the feathers still on inside. The meat is a bit tough, so it takes about 45 minutes to an hour to cook before it's ready to eat. I really like this chicken dish.

I like this type of chicken. The meat is chewy, not much fat, which I prefer, the only down side is the bones are super hard and can break a tooth if you bite on them. I don't like the Loong Kong chickens because they have soft meat and yellow oily fat, too oily for me.
