The fat and lean meat are evenly distributed, and the red and white marbling is visually appealing. It won't fall apart easily when cooked in hot pot. Beef brisket itself has even more lean meat, so it's not greasy and has a rich meaty flavor. Plus, it's already thinly sliced, so you can just take it out and put it directly into the pot without having to do any preparation yourself, which is super convenient.

thin cut beef made into niku udon! Japanese style beef udon noodle soup. quick to marinate and stir fry to put in the soup. some parts were a little tough but good flavor overall.

This is my first time buying grass-fed Angus beef. The quality of the meat looks good. After thawing, you can fry it directly and sprinkle some sea salt on it. The beef tastes good enough.
I had chadolbagi pot rice and chadolbagi mushroom salad. There was absolutely no smell! However, there were a few parts that were a bit chewy.

Brisket was very delicious. Made Korean beef soup( Najoo gomtang). It was pretty good.
40-50% fat on all sides. Brisket is generally about 20% fat so this is a horrible cut. I saw some pictures of much more reasonable amounts of fat. The butcher should know they needed to trim more. Not worth the money for this cut. I could buy similar cuts for half the price at a local store.
