The yellow croaker is big, so there is plenty to eat. I sprinkled it with salt, grilled it, and enjoyed it.
It's an unprocessed fish; you'll need to process it yourself. Even when braised, it still has a slightly fishy smell, which is especially noticeable to those who dislike fishy odors.
The large yellow croakers (scaled and gill-removed) that I used to sell were always out of stock, so I had to try these smaller ones. Actually, they weren't exactly cheap. Three of them weighed just over a pound. I steamed them tonight, and they tasted pretty good, but cleaning them was a bit of a hassle. I hope the original large yellow croakers will be back on the shelves soon.
