It's usually boiled and eaten with other vegetables to supplement vitamins. It's cleaner, has less soil, and is very fresh than what I buy at the supermarket.

This isn't Shanghai bok choy at all; it's the size of a Chinese bok choy seedling! I've loved Shanghai bok choy since the beginning and have been ordering it ever since, but I never expected it to get so big and old. From now on, I'll just buy Chinese bok choy seedlings.
