The fish fillets were excellent; they were simply steamed until very tender and fresh.

Marinate with oyster sauce, a bit of salt and pepper and sugar, with ginger and red onion, some cooking wine, then pan sear as desired. Pack with white rice, veggies and dipping sauce for my son’s school lunch.
