Tastes wonderful but roughly half of it is a thick fat. I had to trim the fat aggressively. I cooked it in sous vide and my friends loved it. If you don't mind trimming so much fat, go ahead and get it. I maybe repurchase if it's on a sale.

The fat-to-lean ratio is 2:1. The real pork neck is about 500 grams, and the rest is fat. It is equivalent to buying pork neck meat and giving away pork lard.
