The tenderest tips of the ginger were all cut off, and the cut surfaces were rotten. It seems we encountered an unscrupulous merchant who only sold the older, cut parts. We used to buy whole pieces. The recipe is simple: blanch thinly sliced ginger in boiling water for 30 seconds, then heat the basic recipe (fresh ginger: 300ml, vinegar: 200ml, sugar: 4-6 tablespoons, salt: 1 teaspoon) until the sugar dissolves, then pour it over the sliced ginger in a jar. It's ready after 2-3 days of pickling. Homemade food is always good because you can eat it with peace of mind

When I received the ginger, it looked perfect, and I was going to make Three Cup Chicken. But when I took out a large piece of ginger to slice, the inside was already moldy and light orange, so I had to throw it away.
