First time ordering this and very happy with what I received. The amount of meat and tendons are pretty even.

Brisket was very delicious. Made Korean beef soup( Najoo gomtang). It was pretty good.
40-50% fat on all sides. Brisket is generally about 20% fat so this is a horrible cut. I saw some pictures of much more reasonable amounts of fat. The butcher should know they needed to trim more. Not worth the money for this cut. I could buy similar cuts for half the price at a local store.
