This is my favorite type of soft tofu. Its biggest advantage is that it can be stored at room temperature; unopened, it doesn't need to be refrigerated. It's very convenient to keep a few boxes at home. Once opened, it has a rich soybean aroma without any beany smell. The texture is very tender and smooth, somewhere between silken tofu and glucono-delta-lactone tofu. It's delicate and can be eaten straight from the box.

Tofu is now available in American supermarkets, but even those labeled "soft" are often quite firm, and if it's too soft, it can only be used for smoothies. However, this tofu has just the right firmness and a smooth texture. Because it doesn't crumble easily, it can be enjoyed not only in dishes like miso soup and mapo tofu, but also as chilled tofu.
