I usually buy dried kelp from a local Korean market, but just haven’t gotten around to it so ordered it here. This is a new brand to me and I used it today to make an udon soup. It was surprised good! It didn’t take long for the kelp to rehydrate. They are big pieces, so will need to break them up beforehand if you don’t want to end up with big pieces of them. Texture and flavor was on point. I would definitely repurchase.

I shredded it and mixed it into a salad, thinking it would be more tender than regular kelp, but it's just regular kelp.
