Since the thin skin has been removed, you can easily use as much as you like. I've repurchased it many times to make salads and pasta sauces. It arrives packaged in an aluminum cooler bag with a large ice pack, along with other frozen foods, so I feel safe using it.
This item came packed with dry ice and was still frozen when I opened the package.
