This is Fresh Kui Fei Chicken from the "New American" brand. The label indicates it was processed by Grimaud Farms (located in Stockton, CA). This farm is known in the US for raising high-quality poultry (such as free-range chickens and Muscovy ducks) and has the USDA (United States Department of Agriculture) inspection mark, providing good assurance in terms of food safety and hygiene. Made the simplest poached chicken, and it was pretty good!

I like this type of chicken. The meat is chewy, not much fat, which I prefer, the only down side is the bones are super hard and can break a tooth if you bite on them. I don't like the Loong Kong chickens because they have soft meat and yellow oily fat, too oily for me.

It needs a longer, slower simmer to get tender, so don't rush it. The pieces are smaller and bonier too, but the bones add a lot of flavor to the pot. Convenience: Having it delivered frozen is great when there's no Filipino market nearby. Just plan ahead, since a whole bird takes time to thaw in the fridge.
