I've bought these water chestnuts a few times, but the quality is just so-so; there are always some bad ones mixed in. However, I always add some water chestnuts to meat patties or meatballs to cut through the richness, and since the amount is small, it's fine.

Although canned water chestnuts don't taste as good as fresh ones, they're great for making lion's head meatballs because you don't have to peel them, which saves a lot of trouble!
I bought water chestnut jelly, cut it into small cubes, added red color from beetroot, then coated it with a layer of tapioca starch. Then I boiled it. That's how I made the cubes for Thai dessert.
