Catfish chunks are very convenient, as they are already quite oily. Just sauté a little oil and ginger, then add the fish chunks, plenty of scallions, soy sauce, sugar, and vinegar to taste. No need to add water; just simmer for a while, and the result is tender, smooth meat without any muddy taste.
