- This dried tofu doesn't have any strange taste, making it perfect for Hakka stir-fries. Without adding oil, stir-fry the pork belly until the fat renders and it's slightly browned. Add the dried tofu and stir-fry until fragrant and slightly browned. In the remaining oil, add garlic and sauté until fragrant. Then add soaked squid and stir-fry until fragrant. Add shrimp, white scallions, a little salt, sugar, 2 teaspoons of soy sauce, white pepper, rice wine, and green scallions. (I used pure brewed soy sauce from Pingtung University of Science and Technology in Taiwan; it's a little sweet, so I didn't add sugar or salt, and it was just right.)
