This tapioca flour is of good quality; I bought it to make taro balls. I just received the taro and immediately posted a review saying it looked very fresh. After posting, I peeled, cut, and steamed it, but it's turned yellow. Perhaps it's not as fresh as I thought, hence the yellowing. When I posted the review, I mentioned that the taro was quite large and I cut it into three pieces, but I only received the middle section. Now I think maybe the top and bottom parts of the taro weren't fresh and were moldy, so they were cut off, leaving only the middle section which looked okay. But steaming it showed that the taro wasn't fresh, which is why it turned yellow.
