- Very tasty small fish. Each fish is about the size of a pinky finger, some are fatter than others with a plump meaty liver/roe/milt, while others are tinier. Very mixed, some of them are even tiger botia fish! In 3 layers, many little fishes are plump, clean, and whole. You will have to clean, not too much meat in head so I chop it off as the fish have thick, sharp barbells/fangs/thorns/spikes at side of face, which can pierce tongue or finger. I clean by using scissors, and never fish smell. take out guts and swim bladder, then remove the blood line at the base of the spine. Fry is very tasty with sprinkled salt, grilled is even better, and braise is worth it. Very clean, mild, light muted sweetness to the flesh, nice fatty portion towarda soft white belly and top of spine where there is a strip of fat. Pairs well with light herbal sauces, tamarind, and Vietnamese seasoning. Small fillets, but meaty for it's size. NEVER fishy and always very clean, always bright fresh eyes and no weird fishiness. Extemely clean too, worth trying. I order 6+ in one order, 1 packet lasts 3 days if you fry, but for 1 braise pot maybe buy 2. crispy fins...not hard fins...skin is smooth but fries very crispy and with bubbles, so clean and crunchy for snacking. Meat tender.
