I only remembered to take a picture after eating half of it. After thawing, I cleaned the fish, dried it with kitchen paper, rubbed it with cooking wine and pepper, placed ginger and scallions underneath, and then stuffed some more ginger and scallions into the fish's belly. I steamed it for 9 minutes after the water boiled, then let it sit for another minute. I took it out, drained the water, poured fish soy sauce over it, added more ginger and scallions, and poured hot oil over it. Delicious!

I've tried steaming, salt and pepper, and chopped chili methods with this sea bass, and they're all delicious. Just be careful of the small bones.
