Last time the lotus roots were long so they were easy to peel, but this time the little ones
Fresh and delicious lotus root
I made baked lotus root sandwiches in the air fryer, so delicious! I used the remaining half to make lotus root and pork rib soup ↔
This was my first time buying lotus root online, and I was amazed by its freshness! After washing and peeling, the lotus root was as white and tender as jade, with a smooth skin and no black spots, and the sections were plump and even. When cut open, the holes were snow-white and clean, completely free of mud and black stuff. You could hear a crisp "crunch" while peeling it, and it was incredibly juicy. I made a stir-fry of lotus root slices; the texture was crisp, refreshing, and sweet, with absolutely no astringency. I plan to use another section to make pork rib soup.
Small lotus roots arrived, and at first I thought those dark parts were spoiled, but they were just the parts that needed washing. Other than that, they were very fresh, and since there was a lot, I washed and prepared them, wrapped them in portions I planned to eat, and froze them.

I bought these to add to rice noodles, but they aren't the mung bean sprouts I'm used to; they are slightly green. They have a slight grassy smell, so if you don't boil them thoroughly, they smell a bit like grass.
Sprouts are a hard find, but Weee has these Pea Sprouts! Tasty & adds a nice crunch to salads. TY Weee for carrying Pea Sprouts
