I always have these two things in stock. Pork belly is meaty less fats. Pork ribs are great too. I use both for either sinigang or adobo.

A large handful of big chunks of fat with no lean meat were cut off and rendered into almost half a bottle of lard The remaining meat was mostly half lean and half fat, so I made braised pork and then chopped it up to make roujiamo (Chinese hamburger), otherwise it would have been too greasy.
