These noodles are the round, thick kind, and they're incredibly chewy and springy after cooking, perfectly replicating the feel of hand-pulled noodles. Most importantly, they hold the sauce exceptionally well; when mixed with meat sauce and cucumber shreds, every bite is flavorful, and they don't get mushy even after long cooking.
