40-50% fat on all sides. Brisket is generally about 20% fat so this is a horrible cut. I saw some pictures of much more reasonable amounts of fat. The butcher should know they needed to trim more. Not worth the money for this cut. I could buy similar cuts for half the price at a local store.

I boiled the beef first and cooked it with curry. I used instant pot to cook it with high pressure of 23 min and slow release for 15 min. I could cook longer next time maybe try 40 min in instant pot. But so far tastes good and will get it again.

I bought it to make beef stew. To be honest, I'm definitely not satisfied. The meat was tough like Indian buffalo meat from Hai Sapa, and the fat smelled terrible. Even after rinsing with lemon, salt, and baking soda, and boiling, it still smelled awful. Even simmering it for 1 hour and 15 minutes, it was still as tough as a rubber shoe sole. It was as tough as a rag with no smell at all. I will absolutely never buy it again. Anyone who says it's good is probably just deceiving themselves.
