Beef tripe is a perfect match for hot pot! My son has loved beef tripe ever since he tried it, especially since it's already cut up so I don't have to cut it myself. It's just a little long, so I cut it in half before adding it to the hot pot! Hot pot is even more perfect in winter! ^_^
