Excellent! The first batch I bought in July and early August tasted more like glutinous corn. The ones from early August were smaller and the heads weren't very fresh. This batch is very fresh and has the texture I wanted, similar to sweet corn. Because glutinous corn has a lot of carbs and a fast glycemic index, this one has more fiber and is healthier. Perfect!

It tastes wonderful, with a subtle, refreshing aroma. Biting into it reveals yellow corn kernels inside. This is what real purple corn looks like. Natural purple outer skin + yellow interior. The purple husk in the picture isn't perfectly uniform; there are also some natural variations in purplish-red and dark purple, making it look more like the natural anthocyanins rather than an artificially added color. Anthocyanins are water-soluble, so they cannot be boiled directly in water. Steaming is the best way to preserve the antioxidant activity of anthocyanins.
