I cooked shrimp wontons in my homemade chicken broth, then added bamboo shoots after the water boiled. They were very fresh and sweet. Thawing bamboo shoots in boiling water is the closest to cooking them fresh; do not refrigerate or thaw them at room temperature, as this will cause the ice to crystallize.
I especially love these bamboo shoots; they taste amazing when stir-fried with meat!
The bamboo shoots were fine, the braised ones were tastier, but overall they were a little dry.

Delicious, no bad smell, I've bought it many times.
Sad to say it has a funky smell (still haven’t tried it though) It was packed with the dry goods somehow, not sure why (thought it is a frozen or at least a refrigerated item)

Bamboo shoots are incredibly delicious. They're great stir-fried or cooked with duck.
Must-have for Maocai (a type of Sichuan hot pot), but unfortunately not on sale.

It's about the thickness and length of asparagus. Soaking it in salt water helps retain its freshness, but the center is slightly bitter and sour. I soaked it, dried it, and stir-fried it directly; the flavor in the center was still there. If you mind that, blanch it first. But it's delicious and refreshing.

These bamboo shoots are quite tender; blanching them in boiling water makes them quite crisp when stir-fried. However, they're a bit difficult to season and it's easy to accidentally overcook them.
This was my first time buying it, and I was surprised by how delicious it was. It's definitely worth buying again and sharing.
