The meat looked fresh, with some cartilage, making it suitable for stewing, braising, sweet and sour dishes, or garlic ribs. The lean and fat ratio was good, resulting in a rich and flavorful stew, and the cartilage was also very chewy. Overall, I'm very satisfied!
