I love keeping dried shiitake mushrooms at home because they add so much flavor to dishes! Once rehydrated, they have a nice chewy texture and a really rich mushroom taste. I also save the soaking liquid to use in cooking because it's full of flavor. So useful for soups, rice, and steamed dishes!
